Simple Vegetarian Chili

Ingredients:

  • 1 tin kidney beans
  • 2 tablespoon oil
  • 1 onion, diced
  • 1 large carrot, diced
  • 1 stick celery, diced
  • 1 red pepper, diced
  • 2 cloves garlic, minced
  • 2 large tomatoes, peeled, seeded and chopped
  • 3 tablespoons tomato puree
  • 1/2 teaspoon powdered cumin
  • 1 1/2 teaspoons chili powder
  • Salt and pepper to taste

Method:

  1. Drain the beans and set aside.
  2. Sauté the carrots, onions, celery, pepper and garlic in oil for 15 mins.
  3. Add the rest of the ingredients and simmer for 5 mins.
  4. Add beans and simmer for 15 mins.
  5. Serve with rice.
