Nut Roast

Ingredients:

  • 4 onions, chopped
  • 5 tomatoes, finely chopped
  • 2 carrots, grated
  • 3 slices wholemeal bread, crumbed
  • 50ml vegetable stock
  • 100g hazelnuts, ground
  • 100g cashews, ground
  • Salt and pepper

Method:

  1. Grease a loaf tin and set aside.
  2. Fry onions in a saucepan for 5 minutes.
  3. Add tomatoes, grated carrot, breadcrumbs, vegetable stock and cook for 15 minutes.
  4. Add nuts and season to taste.
  5. Spoon into a loaf tin. Bake at 200 degrees celcius for 30 minutes.
  6. Wait five minutes before turning onto a plate and slicing.
  7. Serve with roast potatoes, vegetables and vegetarian gravy.
