Roasted Pepper Pasta

Ingredients:

  • 4 red peppers
  • 2 large onions
  • 4 cloves of garlic, un-peeled, whole
  • 4 tablespoons of good quality olive oil
  • 8 tablespoons fresh basil
  • 2 tablespoons balsamic vinegar
  • salt and pepper
  • 600g tagliatelle

Method:

  1. Pre-heat the oven to 200 degrees celsius.
  2. Cut peppers in half and de-seed.
  3. Cut onions in quarters.
  4. Place onto a baking tray with garlic, and pour over olive oil.
  5. Roast for 30 minutes. Be careful not to let the peppers burn.
  6. Remove the skins from the garlic cloves.
  7. Put the roasted vegetables and garlic in a food processor with the basil and balsamic vinegar. Season, and blend into a rough paste.
  8. Cook pasta for around six minutes, drain, and mix in sauce.
  9. Serve with a green salad.
