Banana Cake

Ingredients:

  • 200g self-raising flour
  • 1 heaped teaspoon baking powder
  • 75g soft brown sugar
  • 2 bananas, mashed
  • 225ml water
  • 85ml sunflower oil

Method:

  1. Grease a loaf tin.
  2. Preheat oven to 175 degrees celsius.
  3. Sieve the flour, baking powder and sugar into a bowl and stir in the mashed bananas.
  4. Add the water and oil very slowly to the mixture, stirring continuously until all encorporated and smooth.
  5. Pour into the prepared loaf tin and bake for 1 hour until firm but springy to the touch.
  6. Cool the cake on a wire rack and slice only when completely cold.
